• Avocado: 2 ripe ones
  • Fresh coriander: big bunch
  • Red onion: 1
  • Green or red chilli: 1
  • Lime juice: from 2
  • Salt to taste
  • Black pepper: good grind
  • Coriander powder: 1 tsp
  • Cumin powder: 1 tsp
  • Tomatoes: ripe x 4, deseeded and chopped


Crush together in a blender to a fine paste adding fresh coriander, onions, salt, pepper, lime juice, coriander powder, cumin powder & chilli. In a serving bowl, peel and cut the avocado. Add the crushed paste to the avocado. Using a potato masher, crush the mix to desired consistency. Add the chopped tomatoes. Serve with blue corn tortilla chips or nachos. Serves four.
