Potato wedges


  • Potatoes: 1 kg, washed, scrubbed and cut into wedges
  • Olive oil: 1 tbsp
  • Dried oregano: 1 tbsp
  • Dried thyme: 1 tsp
  • Himalayan pink salt: 1 tsp
  • Black pepper, ground: 1tsp
  • Garlic or garlic powder: 1 tsp
  • Smoked paprika: 1 heaped tsp
  • Sweet paprika powder: 1 tsp


Mix all ingredients in a large bowl and ensure all wedges are coated evenly with the spices. Pre-heat oven to 220 degree centigrade. Line baking tray with baking paper and spread the potato wedges with the sharp edge facing up in a single layer. Bake for 40 minutes or until outside is crispy and soft inside. Serve hot. Serves four.
